Grilled Red Pepper Sauce with Salmon

INGREDIENTS

  • 3 garlic cloves; chopped
  • 1 small onion; chopped
  • 2 Tbs. olive oil
  • 3 Tbs. toasted pine nuts
  • 1 jar grilled red pepper; puréed
  • Salt and pepper
  • 4 salmon fillets
  • 1 Tbs. butter

INSTRUCTIONS

Cook the onion and garlic in the oil until soft. Purée the onion mixture, including the cooking oil with the pine nuts. Put the onion and pine nut mixture in a sauce pan with the puréed red peppers, salt and pepper, then cook for about 5 minutes. Keep warm. Cook the salmon fillets in the butter for about 6-8 minutes, turning 3 times. Serve with the warm red pepper sauce.
